Yay, today is finally Friday! I thought I’d celebrate with a tasty treat to beat the heat here in Los Angeles! This is a very quick and easy recipe that will be sure to impress any weekend guests that might stop by!

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 handfuls of chocolate chips
  • Carton of vanilla or your choice of ice cream

PREHEAT oven to 375
° F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE
for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

While cookies are cooling let ice cream sit at room temperature for 15 minutes for easier spreading.

Once Cookies are cooled, take two cookies and spread with about a 1/4in. of ice cream on each. Place cookies on top of each other with the ice cream facing inward towards one another and apply pressure without breaking the cookie.

Wrap in plastic wrap and let sit in the freezer for at least 20 minutes before serving. Makes 14 sandwiches.
